This is an easy, healthy, lean, delicious, no cook meal, or a snack for summer or any time. You can use any kind of tomatoes, cherry or regular, red or yellow, heirloom, or a mix. Choose your favorite bread (toasted) and get creative with toppings of your choice. This meal will be yummy and quick so you can go and relax.

Ingredients

1 garlic clove, finely grated.
1/2 cup organic plain whole yoghurt or cashew cream.
1/2 teaspoon or more fresh lemon juice.
4 slices artisan, country style, or organic whole wheat bread, toasted.
3 medium tomatoes, thinly sliced.
2 tablespoon, finely chopped chives or basil.
Sea salt.
Freshly ground black pepper.
1 tablespoon or more for drizzling organic extra virgin olive oil.
Avocados; sliced (optional).
Honey (optional).
Crushed red peppers (optional).

Directions
Mix garlic with yoghurt or cashew cream in a small bowl. Add lemon juice and salt and mix.

Spread the mixture on your toast, top with tomato slices  and avocados (optional) and sprinkle chives or basil, salt and black pepper, and crushed pepper, if you desire. Drizzle olive oil and/or honey and munch away. Yummo!
