This is an easy, healthy, fast and delicious snack for Halloween and for fall.
You can pick and choose your spices and add as much or little as you like.
Pumpkin seeds are an amazing nutritional powerhouse with magnesium, zinc (helps prevents colds), protein, antioxidants & copper. It also benefits your heart, liver, the immune system, and fights diabetes, certain cancers, and helps reduce menopause symptoms. Wow!!

Ingredients

Pumpkin seeds from 1 medium pumpkin
1 tablespoon extra virgin olive oil (evoo, preferably organic)
Sea or kosher salt & freshly grounded pepper
Pinch of cinnamon
Pinch of cumin
Pinch of cayenne
1 tablespoon honey or agave

Optional
Toss with nuts such as cashews or walnuts and dry fruits such as raisins or cranberries.

Directions

Preheat oven to 350 degrees.
Remove the seeds from pumpkin and spread them onto a baking sheet. Bake for 20 minutes or so.
Remove the seeds from the oven. Toss them with evoo, salt, pepper, spices and honey or agave.
Return the seeds to the oven and bake until golden brown; about 15 minutes.
Remove from oven and stir the seeds to prevent sticking.
Let it cool and enjoy!
