This is a simple, easy, cheap, and healthy comfort food. You can use brown rice or cauliflower rice to pack in a healthy punch, and frozen veggies to make your life easier and clean out your refrigerator. Woohoo!

You basically throw everything in a giant pot or a wok, stir, and then eat. You can use any kind of rice, including cauliflower rice. You can make your own by putting cauliflower florets in a food processor or use store bought organic ones.
You can serve the fried rice with a hot sauce of your choice. Kid love ketchup on it.
You can also serve with fresh lettuce leaves to use it as a wrap.You can also leave out the eggs and make it truly vegetarian.
Make a giant batch of the fried rice. It can be next day or the weekend’s lunch or dinner for kids to grown up.

3 tablespoon of regular organic olive oil (not extra virgin), organic grapeseed or avocado oil.
2 organic eggs (beaten)
1 bunch scallions, chopped
1 cup frozen organic peas, carrots and/or corn (thawed)
½ to 1 cup of onion, chopped
Any vegetables you have such as broccoli, mushrooms, snow peas, spinach, etc chopped to similar size
4 cups cold cooked organic or regular white, brown or cauliflower rice
4 tablespoons of tamari or organic soy sauce
2 tablespoon of sesame oil
Grounded pepper
Minced garlic & ginger (optional)
Lettuce leaves (optional)
Hot sauce (optional)
Peanuts, chopped (optional)


In a large skillet, pot, or a wok, drizzle the oil over medium heat.
Add the eggs and stir until they are cooked.
Add the vegetable and rice and give it a good stir for a minute or two.
Then add the tamari, sesame oil, and pepper, and sprinkle the scallions on top and serve.

Secret to Great Stir Frying

The secret to great stir frying is having everything ready before you turn on the stove. You can even have them lined up in order. Get all your vegetables, washed and chopped on a platter, eggs cracked and beaten and in a small bowl and the sauce all mixed or handy by the stove. Don’t over cook the veggies or rice. Add the sauce when they are about 3/4 cooked. Once you start cooking, it will go fast and it will make your life easier with less clean up and dishes, and you’ll avoid having soggy fried rice.
