Healthy, easy, delicious, fast, and low calories with a nutritional punch that you can eat with your fingers. What more can you ask for? You can use any kind of mushrooms; which is truly a magical food that is incredibly powerful, meaty, and delicious. I like using organic shiitake mushrooms, but any or a combination of mushrooms works well. Make sure you chop them up the same size so they cook evenly, and always opt for organic and fresh/local ingredients as much as possible.

Ingredients

11/2 to 2 cups of organic mushrooms
2 Tbsp. organic soy sauce or tamari
1 Tbsp. dark brown sugar or organic maple syrup
1 Tbsp. sambal oelek or Sriracha, or your favorite chili sauce
2 Tbsp. organic olive oil
3 scallions sliced thinly
2 garlic cloves, finely chopped
Organic butter lettuce or regular lettuce leaves
Fresh ground peppers
Lime wedges

Optional:

Water chestnuts, sliced
Bamboo shoots, chopped

Optional Toppings
Pine nuts, cashews or peanuts; chopped
Organic cilantro; chopped
Avocado; cubed
Sesame seeds; white or black seeds for sprinkling

Directions

In a small bowl, mix together soy sauce or tamari, chili sauce, brown sugar or maple syrup.

In a sauce pan over medium heat, add oil, garlic and scallions and stir until translucent. Add the mushrooms and any of the optional ingredients and stir until they are softened. Add the soy sauce mixture and stir until most of the sauce has evaporated; about 2 minutes. Add some freshly ground peppers and give it a taste and season to your liking.

Serve by placing lettuce on a plate and placing a scoop of mushroom mixture in it or you can place it on the side. Garnish with lime wedges and/or pine nuts or peanuts, avocado cubes, cilantro and sesame seeds, if desired, and enjoy.
