You probably have all the ingredients for these easy, delicious, and healthy cookies, and it’s fast and you can enjoy it without any guilt, stress, or mess.

Ingredients

3 cups Apa flour; preferably organic
1 tsp baking powder
½ tsp sea/ kosher salt
1 tsp ground ginger
½ tsp ground cinnamon
½ tsp ground cloves
½ cup safflower or extra virgin olive oil; preferably organic
2/3 cup agave nectar or honey
½ honey; good quality
2 tsp vanilla extract

Directions

Preheat oven to 350 degrees.

In a bowl, combine all the dry ingredients, flour, baking powder, salt, ginger, cinnamon, cloves in a bowl.

In a separate bowl, combine all the wet ingredients, oil, agave, honey, and vanilla.

Add the dry ingredients to the wet and mix to form a dough.

Roll out the dough between sheets of parchment paper and cut out the cookies and place on a baking sheet with parchment or silpat.

Bake for 8-10 minutes. Cool and enjoy!
