These PB cookies only has 3 ingredients! So you can make these any time, especially last minute with anyone, including the laziest family members and friends around. And while it’s delicious, it’s also super healthy. So go ahead and stuff yourself.
Remember, when you’re buying anything, read the ingredients. A jar of peanut butter should only have one ingredient – organic peanuts. You can also make your own PB by running it in the food processor. The oil from the nuts will turn it into butter. Salt is optional, but I would avoid it. You don’t need the extra sodium and you won’t miss it.
1 large organic free range egg
1 cup creamy organic peanut butter
1 to 1 1/4 cups of organic coconut sugar or
1 cup of organic sugar
Sea salt (optional)
Preheat oven to 350 degrees.
Line baking sheets with parchment paper or silpat
In a mixing bowl, beat egg for a minute. Add the peanut butter and sugar and mix well to a smooth consistency.
Drop a spoon full of dough on the baking sheet with enough room to expand.
Press the top of the dough with a fork, making a crisscross pattern.
Bake cookies until it’s golden brown, about 10-12 minutes.
Let it cool and then devour. Yummo!
You can store these cookies for up to 3-4 days, but they won’t last that long.
