Spicy Mixed Noodles
Yield: Serves 3-4
This dish is one of my family’s favorite comfort food.
It’s easy, delicious, healthy, and hot! hot! & hot!
You can add as much or little spicy ingredient as you want, and you can add any kind of toppings of your choice or none at all. Be creative and make it your own way.
1 lb Korean somen noodles or Japanese buckwheat noodles or any kind of pasta like angel hair.
3-4 cups mixed greens
2-3 cucumbers, thinly sliced
1 Asian pear or fuji apple, thinly sliced
1 cup of kimchi, chopped (add as much or little as your want)
Radish or any kind of sprouts (optional)
3 tbsp Korean red chili paste (gochujang) Use as much or little as you want.
1 tbsp of Korean chili powder (can substitute with paprika)
2 tbsp rice wine vinegar
2 tbsp organic sugar or coconut sugar
2 tbsp toasted sesame oil
1 tbsp toasted sesame seeds
pinch of freshly ground pepper
1 tbsp garlic, finely minced
2 tbsp green onions, finely chopped
Make the noodles/pasta following the instruction on the package.
In the meanwhile, prepare the vegetables and fruit toppings. Set aside.
In a small bowl, combine all the ingredients for the sauce, stir and set aside.
Drain the noodles/pasta and rinse in cold water several times.
In a mixing bowl, add the noodles/pasta, toppings (veggies & fruits), and the sauce and toss well.
Serve in a bowl or a plate topped with sprouts. Enjoy.
