These wonderful mushroom burgers are so easy, healthy, delicious, hearty and meaty with no grease, mess, or guilt. I can eat about 2 of them and I store the rest for another meal and recipe.
You can bake them in the oven, grill it indoors or outdoors, or cook them on the stove. It’s very versatile.
Try it for any holiday or a simple, healthy and tasty weeknight meal. Serve with cashew aioli rather than mayo and baked fries or chips, and you have a nutritious powerhouse meal that is also Yummo!
4 large Portobello mushroom; preferably organic
3 tablespoon organic olive or avocado oil
¼ balsamic vinegar
2 cloves of minced garlic
Pinch of sea or kosher salt
Freshly grounded pepper
Preheat the oven to 400 degrees.
Gently wipe each of the mushroom with a damp cloth.
Cut off the mushroom stem (save it for stock) & set aside.
In a small bowl, mix oil, balsamic vinegar, garlic, salt and pepper.
Brush both side of the mushroom with the mixture well.
Place the Portobello mushroom on a baking sheet and bake for about 10 minutes. You can also grill these outside.
Serve as is with condiments or turn it into a burger and top it with your favorite burger toppings of lettuce, tomatoes, onions, avocados, greens, cole slaw, gucomole, etc., and enjoy!
